Festive Filo

Spinach and Feta Filo Rolls

1/2 bag of fresh spinach, chopped (or use thawed frozen spinach, well-drained)

1/2 block feta cheese, crumbled

Salt and pepper (remember feta is salty so only a small amount of salt)

A pinch of nutmeg 

1 egg, lightly beaten

1/2 packet filo pastry (around 5-6 sheets)

50g melted butter or oil (for brushing) spray oil can be used too

Sesame seeds

Mix all the ingredients in a bowl till well combined.

On a clean, flat surface, lay out one sheet of filo pastry and brush lightly with melted butter or oil. Place another sheet on top, and brush with more butter. Continue until you have 3-4 layers.

Spoon on the spinach mixture about a third of the way up and roll. Chill and cut to size and brush with oil and sprinkle on sesame seeds

Bake in hot oven till golden.

These can be made in advance and frozen uncooked.
