with a Thai Peanut dressing…….
Thai Peanut Dressing
1/2 cup peanut butter
2 tablespoons lime juice
1 teaspoon fish sauce
2 tablespoons rice vinegar
2 tablespoons soy sauce
1 tablespoon honey or brown sugar
1 teaspoon sesame oil
2 teaspoons sriracha
1 clove garlic
1 teaspoon fresh ginger or 1/2 teaspoon dry ginger
1/4 cup coconut milk or water to thin
Add to a large jar and shake well to mix.
Taste and add more liquid if too thick or more sriracha if you like it hotter.
Goes well on noodles or salad or rice and tuna. Sometimes I just eat it out the jar.
Keeps well in fridge for a week.
