Toast the Season -French?

French toast is a easy quick brunch that feeds a family and can be dressed up or kept plain.

A great idea for Christmas Day or Boxing Day. Add just syrup or go the whole hog and add crispy

bacon and banana or berries. Cinnamon sugar is good too.

The earliest recorded record for a dish resembling French toast was discovered in a 4th-century Roman cookbook by Marcus Gabius Apicius called "Cooking and Dining in Imperial Rome."

The recipe is called aliter dulcia (translation: "another sweet dish") and describes pieces of crustless white bread that are soaked in milk and beaten egg, then fried in oil and doused with honey.

2 eggs

1/2 cup milk (soy or rice bran etc) You can use cream if you want it rich and decadent!

Thick white bread (brioche is good)

Oil and butter

Toppings - fresh or frozen berries, crispy bacon and maple syrup, cinnamon sugar.

Whisk together egg and milk/cream in a shallow bowl. Then melt 1 tbsp butter and a

dash of oil (to stop the butter burning)in a non stick frying pan.

Dip bread quickly into the egg mixture, coating both sides.

Place in pan and fry till golden brown. You can usually fit 3-4 pieces in at a time.

Top and serve. Go festive with mint and a dusting of icing sugar.
